OK, I'm either getting old (yes, totally), too stressed (big time) or I somehow managed to delete the scoring video of my last post that I promised to share. Maybe I didn't even make one, who knows (see pt.2). �� Anyhow, worry not, I'll make one in the near future, until then, here is a scoring video of the second last post, which I also got a lot of questions about technique. � . As you can see, the base dough is wrapped in another layer of dough (can you spot sesame seeds?) which is then scored and this is the reason it opens up nicely. When making this kind of bread, chop some portion of the dough and roll it to circle, grease it with oil and than wrap the base dough with it and that's it. It's time for another video! ☺ • Following my last post, I was so pleased to hear from so many people whose journey into sourdough baking was also inspired by Michael Pollan and his documentary and/or book, Cooked, that I have decided that through the month of June I am going to share one of my favourite Michael Pollan quotes at the end of every one of my posts. Some of the quotes are about cooking in general and not specifically bread making, but the messages are of course still highly applicable. It's not just that I find so much wisdom in his words, and that he has literally changed my life. But he also gave me the ability to really enjoy cooking and baking again. It used to hurt when I would turn up to a party with a beautifully decorated homemade dessert to be met with comments like, 'wow, you must have a lot of time on your hands'. It made me feel embarrassed, guilty even, that what I was indulging in was a luxury, that somehow that time was not well spent. But Michael Pollan reminded me that cooking is one of the most important things we can do, and that time spent on it is entirely worthwhile. So for my first quote, I chose this one: • “For is there any practice less selfish, any labor less alienated, any time less wasted, than preparing something delicious and nourishing for people you love?”
